I am a graduate of the University of Minnesota with as B.S. in Wildlife Biology, and M.S. and Ph.D. degrees in nutrition with an emphasis in biochemistry. I have research experience in appetite regulation and obesity, and control of gene expression. In my 25 years of university teaching in Texas, Michigan, and Montana, I have taught a wide variety of nutrition courses including introductory nutrition, sports nutrition, clinical nutrition, advanced metabolism, and lifecycle nutrition. I also have experience teaching public health, personal health and wellness, physiology and exercise physiology courses. I am particularly passionate about helping students see how nutrition can improve sports performance and overall health and longevity. I strive to build upon students prior knowledge to enable them to make strong connections to the information and to foster deep and lasting long-term learning. I also strive to make relate course content to current news stories and real world examples that are relevant in the lives of my students.
