learning food preparation techniques such as creaming, folding, kneading, tempering and "cutting in" that can then be applied to a variety of recipes. The first half of the course is technique based and the second half the the course is focused on foreign foods and why people eat what they do, all around the world. Students will understand the principles of food safety, food preparation, selection and storage.
