In this course, students will further develop their culinary skills and explore hospitality/restaurant management through nutritional analysis, recipe costing and development, and correct use of food service equipment. In addition, students will get hands on experience learning about restaurant management through the operation of small food production and catering business by means of production, finance, marketing, and customer service.
