This program prepares students with advanced skills that will enable them to seek employment in institutional, commercial or independently owned food establishments or other food and hospitality industry occupations. It focuses on both the foundations of restaurant management, as well as skills in culinary arts. Instruction includes topics such as preparing breakfast foods, sandwiches, meat, poultry, seafood, desserts and baked goods; purchasing and inventory; sustainability in the restaurant and foodservice industry; and international foods. Students will complete an e – portfolio demonstrating all the culinary arts techniques they have learned this year. Upon completion of this course, students will earn a career skills certificate for Foodservice and Culinary Arts.
